Experience authentic Japanese home cooking in a cozy, welcoming kitchen in Tokyo — rich in tradition and full of flavor.

The lesson is warm and friendly, just like cooking with a Japanese friend. You will enjoy both cooking and eating, and you will also receive simple recipe cards to take home.

I have been teaching cooking for more than 17 years. I hold a chef’s license and teach in clear, easy-to-understand English.

We do not use wheat or gluten-containing ingredients in our gluten-free classes. However, this is a private home kitchen and not a dedicated gluten-free facility, so we cannot guarantee a completely gluten-free environment.

Basic Course


Basic Course meal: nikujaga, onigiri, dashimaki tamago, shiraae and miso soup

I will show you how to prepare Japanese dashi, nikujaga, and miso soup. We will also make onigiri together, and you will get hands-on experience preparing shiraae and dashi maki tamago.

Nikujaga is a classic home-style dish made by simmering sliced beef, potatoes, onions, and carrots in a lightly sweet soy-based broth.

Shiraae is a traditional side dish where blanched vegetables are mixed with a creamy tofu dressing seasoned with sesame, miso, and a touch of sweetness.

Dashi maki tamago is a fluffy rolled omelet seasoned with dashi.

What you will make

  • Nikujaga (Japanese meat and potato stew)
  • Shiraae (vegetables with tofu dressing)
  • Dashimaki Tamago (Japanese rolled omelet)
  • Onigiri & Miso Soup

Gyoza & Karaage Course


Gyoza and Karaage Course: pan-fried gyoza, karaage and a fresh vegetable salad

You will wrap the gyoza filling yourself. If you want to make it gluten-free, you will make gluten-free gyoza wrappers from scratch.

I will also teach you the key techniques for making karaage that is crispy on the outside and juicy on the inside.

You will grind sesame seeds with a suribachi and prepare a Japanese-style sesame dressing.

For those who are interested, we will also make pressed sushi (oshizushi) using shrimp and smoked salmon as a bonus activity.

  • Karaage (Japanese-style fried chicken)
  • Salad (seasonal Japanese vegetables, soy-sauce dressing)
  • Oshizushi (pressed sushi)

Katsu Curry Course


Katsu Curry Course: tonkatsu and fried shrimp with Japanese curry and grilled vegetables

We will make curry roux from scratch using stir-fried vegetables and a blend of several spices and dashi broth.

I will also teach you how to easily prepare tonkatsu (pork cutlet) and fried shrimp, along with a Japanese-style potato salad. For gluten-free, we use gluten-free breadcrumbs. For vegetarians, we use deep-fried tofu.

During the tasting, you can enjoy them with various toppings (grilled vegetables) and flavor variations!

  • Toppings: tonkatsu, fried shrimp, grilled vegetables
  • Japanese-style potato salad

Tofu Course


Tofu Course: tofu hamburger steak, agedashi tofu, onigiri and clear soup

We will make soft oboro tofu from scratch using soy milk and nigari (bittern).

You will also learn how to prepare Japanese dashi. Using silken tofu, we will cook traditional Japanese home-style dishes together, including agedashi tofu and shiraae (vegetable salad with creamy tofu dressing).
